Practice makes perfect, and over the years he’s
developed a series of signature drinks, below. For
reference, a “drip” is a few drops, a “dribble” is two
drips, and a “dash” is no more than a teaspoon. It is also
important to note that orange bitters vary and it is
important to use the correct ones. Those and falernum can be
hard to find but are available on-line from
kegworks.com. Stirrings
Bitters can sometimes be found at Whole Foods. Some
ingredients like orgeat and tamarind syrup can be found in
Italian specialty food stores. |

Favored Mixing Bourbons: Old Crow, Makers Mark, Corner Creek

Brian’s variation of a Manhattan:
1 Chilled Martini Glass
3 oz Bourbon (Old Crow or Makers Mark are good wheat-based mixing
bourbons)
Drip Angostura Orange Bitters
Dribble of Tawney Port
Ice
Shake with ice and let sit five minutes – this allows the flavors to
blend. Pour, garnish with a small squeezed wedge of lemon.

Brian’s
variation of a whiskey sour:
2 oz Bourbon
Fresh Squeezed:
½ Blood Orange
½ Lemon
Drip Fee’s orange bitters
Dash pineapple juice
Shake all but the cherry juice and pour with shaken ice into
highball glass. Add cherry juice so that it settles to the bottom,
garnish with blood orange and lemon wedge.

This is a much debated Polynesian drink from WWII and
this is an “improved” version that replaces ginger ale or ginger
beer with ginger liqueur:
1 oz. bourbon
1 oz. gin
1 oz. lime juice
.5 oz. Canton ginger liqueur
dash Stirrings Blood Orange Bitters
Shake room temp, pour over cracked ice, let sit for five minutes to
blend flavors. Garnish with lime/orange skewered twists.

3 oz Pineapple–infused Bourbon
Drip Fee’s Orange Bitters
Dash tamarind syrup
Dash of ginger liqueur
Mandarin seltzer
Shake with ice and let sit five minutes – this allows the flavors to
blend. Res-shake and pour entire shaker contents into double old
fashioned glass, add orange seltzer, garnish with a squeezed wedge
of lemon.

Shake with ice and let sit five minutes – this allows the flavors to
blend. Pour entire shaker contents into double old fashioned glass,
garnish with a squeezed wedge of orange

Dash of ginger liqueur
Shake with ice, serve in chilled martini glass with lemon ribbon
Martinis
Favored Mixing Vodkas: Ketel One, Balinoff
Wiprud Vodka Martini:
1 Chilled Martini Glass
3 Oz. Vodka
Drip Reagans Orange Bitters
Drip Non-oaky Chardonnay
Shake vodka vigorously with ingredients and pour, garnish with a
double twist. Unlike the traditional mix using vermouth that easily
overpowers and ruins a martini (often vermouth that has been sitting
on a bar a long time has turned) chardonnay mellows the vodka with a
fresh, clean taste.

Tai Martini:
1 Chilled Martini Glass
Juice ¼ Lime, lime twists
3 Oz. Vodka
Dash of Cointreau (into the chilled glass)
Two dashes Orgeat (into the chilled glass)
Grenadine
Ice
Shake vodka and lime. Do your dashes into the chilled glass, wipe
martini glass rim with spent lime, pour, garnish with lime twists.
Dribble grenadine in there to sit on the bottom of the glass for
color. This drink can easily be made into a Zombie Martini by adding
a dash pineapple juice, and into a Scorpion Martini by adding
pineapple juice and brandy.
Hulatini
1 Chilled Martini Glass
3 oz Pineapple–infused Vodka
Straw of Blue curacao
Straw of Grenadine
Shake with ice, serve in chilled martini glass. Use a drinking straw
to place first the red grenadine at the bottom and then the blue
curacao on top of that for a layered effect at the bottom. When the
drink is swirled it turns violet.
Beetini
1 Chilled Martini Glass
2oz Vodka
Dash Lemoncello
Dash Barenjager (honey liqueur)
Shake with ice, pour into shilled martini glass, garnish with lemon
peel
